Judy is a Korean California Gurl and an aspiring lawyer who leads a secret life as a k-pop singer and instant food chef. She's been honing her pancake skills and can now whip up a mean plate of savory pancakes.
These potato pancakes are a Korean comfort food often eaten on rainy days because the crackles of the frying potatoes are reminiscent of the pitter patter of the rain outside - how cute! The garnish, which is usually sliced bell pepper or scallion, adds a pop of color and flavor.
